Hawaiian Chicken

Good in the Crockpot AND freezes well.
Serves 8-10
6 lbs boneless, skinless chicken breast halves
2 16 oz cans pineapple slices, drained
2 15 oz cans mandarin oranges, drained
1/4 C cornstarch
1/2 C brown sugar
1/4 C soy sauce
1/4 C lemon juice
1 t salt
1 t ginger
1/2 t ground red pepper

Put the chicken in the crock pot. Mix remaining ingredients together and pour over the chicken. Cook on high 2-3 hours or low 4-5 hours. Serve over rice.

To freeze, put chicken in a ziploc, mix remaining ingredients and pour over chicken.

Tried it, loved it. I only used 3 chicken breasts and cut the recipe in half.
